Instant Pot Muffin Mix Mini Cake

Need a quick and easy dessert that only takes 8 minutes to make? Then you need to try making one using muffin mix.  I bought a Marie Callender’s Orange Cranberry Muffin Mix (to be totally honest, I bought it to make last Christmas–oops).  Just follow the directions on the package to make the batter.

Pour into a mini bundt or if you have this adorable mini flower pan, then spray it with cooking spray.
Pour the batter into the cake pan.

Add 1 cup of water to your Instant Pot, today I used the 3 qt Mini Instant Pot available here. 

Make a foil sling so you can easily remove the HOT pan from your Instant Pot.

How to make aluminum foil sling:
Improvised aluminum foil sling – cut about 18” long aluminum foil, fold it into thirds in the long side. Put this under the pan and use the two sides as handle for you to be able to lower and take out the pan in IP.

Put the lid on your Instant Pot, turn the vent to Seal and using the Manual or Pressure Cook button, set your time to 8 minutes.

After the 8 minutes, do a Quick Release and remove the pan from the Instant Pot.  Let cake cool in your pan for about 15 minutes, then turn upside down onto a plate.

I added an orange glaze by squeezing the juice of half an orange (1 T) or if you have orange juice you can use that- add 1/2 cup of powdered sugar. Mix until smooth (adding more sugar or juice if needed).
Drizzle over cooled caked.

Making your muffin mix this way is so much faster and easier than making individual muffins.
