PISTACHIO CAKE OR WATERGATE CAKE

For those of you celebrating Orthodox Christmas today (January 7, 2023) Merry Christmas!

I hope everyone else had a wonderful Christmas and a Happy New Year! My hubby and I invited our best friends to join us for Christmas Dinner this year. We enjoyed a great meal, laughter and played our favorite board game…SEQUENCE! The guys beat us!


I was going through some old recipes of my mom’s and came across her recipe for Pistachio Cake. I haven’t made this cake in years…could even be decades!! It was one of my favorites too! All I could think about was baking this cake, I couldn’t even sleep in this morning. I was even up before the sun came up and that’s not typical for me! 🤣😂

I have to ask you, “are you tired of always making mediocre cakes from scratch?” Have you ever wished you could just dump a bunch of pre-made ingredients into a bowl, mix it up, and magically have a delicious cake? Well, my fellow baking enthusiasts, I have some exciting news for you! This is one of the moistest cakes you will ever bake! I hope you enjoy it as much as our family does!

This can also be made with a WHITE cake mix, if you use a white cake mix, then only use the whites of the 3 eggs.

Now, let’s get down to business. First things first, preheat your oven to the temperature listed on the cake mix box which is 350 degrees. Then, gather your ingredients – all you’ll need is the cake mix, eggs, oil, and Sprite. That’s it. No sifting, no creaming butter and sugar, just a simple mix of pre-made ingredients. I baked my cake in a tube pan or an angel food cake pan. Be sure to grease and flour or use a baking spray.

1 PKG. YELLOW CAKE MIX
1-3.4OZ. PKG. INSTANT PISTACHIO PUDDING
1 C. VEGETABLE OIL
3 EGGS
1 C. SPRITE SODA
Mix cake mix and pudding together. Add eggs, oil, and Sprite soda. Mix all together for 4 minutes at medium speed. Add 1/2 cup chopped pecans now if you are using them. Beat a little longer.

Bake 40­-45 minutes (or until toothpick comes out clean) at temperature directed on box. (350 degrees) Let cool completely before putting on the icing.

ICING:
1 (1.3 OZ.) PKG. DREAM WHIP (1 ENV.)
1 1/4 C. COLD MILK
1-3.4OZ PKG. INSTANT PISTACHIO PUDDING
Blend Dream Whip and milk. Beat at high speed to peaks. Gradually add pudding. Beat until light and fluffy.

Decorate top of cake with flaked coconut, chopped pecans and maraschino cherries.

Note* I made this sugar-free by using sugar-free cake mix, SF sprite and SF instant pudding

Finally, the moment we’ve all been waiting for – the taste test. Once your cake has cooled, slice yourself a generous piece and dig in. Was it worth the minimal effort? Absolutely. This cake is moist and oh-so-delicious. And the best part? No one has to know you didn’t slave away in the kitchen for hours. Just tell them you made it from scratch and watch their jaws drop in awe of your baking skills.
