Instant Pot Crack Chicken

Today is June 2, this year is just flying by so fast! It’s my little brothers birthday…he turned 61 today.  I told him, “we are getting old”.  I mean, talk about the years flying by, where has the last decade gone?

I spent my morning cleaning the kitchen and then decided to make this Instant Pot Crack Chicken recipe that everyone has been raving about.  I seriously am in love with my Instant Pot and if I had room on my counters, I’d probably buy the 3 quart mini.  My niece has one and she brings it to every picnic we have with her Buffalo Wing Dip. Here are the Ingredients:

Boneless chicken breast
1 package of Ranch Dip (dry)
1 8 oz. package of cream cheese
1/2 cup water
1 cup of shredded cheddar cheese
6 slices of bacon- fried
Noodles or Rice

I had taken my boneless chicken breasts out late morning to thaw and so when it was time to make this recipe, they were still a little frozen.  This recipe is so easy, you just dump everything into the pot.


Put the chicken breast in the Instant Pt, sprinkle 1 package of Ranch Dip on top
and add 1- 8 oz package of cream cheese,

add 1/2 cup of water
Since my chicken was still somewhat frozen, I did manual, high pressure for 25 minutes.  If you are using thawed breasts, you can do 15 minutes. Do a 10 minute Natural Pressure Release (that means to let the Instant Pot alone for 10 minutes so some of the pressure releases on its own) then you can do a Quick Release and let all the pressure out.

Remove the chicken and shred it.
I used my food processor, you can also use a mixer to shred the chicken,

or just use 2 forks and shred it that way.
Once it is shredded, put back into the Instant Pot,

add 1 cup of shredded cheddar cheese
(I used mild) and stir until cheese is melted.

While the chicken is cooking you can fry the bacon.

Once everything is done, sprinkle bacon into the chicken mixture.

I made some egg noodles while the chicken was cooking and then added it all together and mixed to incorporate. Rice would also be another good option or you can eat it just plain.

Eating it plain it only has 2 carbs per serving!!!
