Instant Pot Chicken Tortellini Soup

With the cooler weather, soup is always a good option for dinner.  Even if you are having a busy day, you can still put a quick meal on the table for your family!  This Chicken Tortellini Soup is quick and easy with only 5 ingredients!  Here is what you need.

4-6 boneless chicken tenders or 2 boneless chicken breasts
1 cup of chopped carrots
1/2 cup of chopped celery
4 cups of chicken broth (I like to use Better Than Bouillon Chicken Flavor) It takes 1 1/2 T with 4 cups of water to make the 4 cups of broth)
1 package of fresh tortellini found near the deli (I used the 3 cheese) or you could use the dried.

Pour the 4 cups of chicken broth into the your Instant Pot. Season your chicken and place it into the Instant Pot. Close and seal the lid.  Set your IP to cook on high pressure for 15 minutes.

While the chicken is cooking, chop up your carrots and celery.

After 15 minutes, do a Quick Release (that’s releasing the steam manually).  Remove the chicken to a plate.

Put in the carrots, celery and tortellini into the Instant Pot.

 Close and seal the lid.  Set time for 3 minutes on high pressure. I haven’t tried the timing for dried, if you are using dried tortellini, you may have to go for 4 minutes.

While this is cooking, shred your chicken.

After 3 minutes, do a Quick Release.
Remove the lid and add your chicken back into the pot and give everything a quick stir.

Sprinkle with parsley flakes and serve piping hot into your bowl.
