Instant Pot Chicken and Vegetable Soup

A little over a week ago, I decided to try a new diet plan to lose weight. I think more than a diet, it’s a new way of learning to eat the right foods. Avoiding anything with preservatives and high fructose corn syrup. You can have honey, maple syrup and coconut palm sugar but avoid white sugars and diet sugar substitutes.

So far, I’m not missing the sweets. (ask me that when Thanksgiving and Christmas get here lol ) but I’m hoping by then I will be able to indulge just a little.  This eating plan is based on eating the proper amount of protein, vegetable, carbs and fat at each meal.  Plus, you get a supplement that is supposed to reset your hormones, something I think I really needed.

I’m pretty excited about it and have lost 5 lbs so far and 3″ off my waist!  Poor hubby isn’t getting all the good meals I was making for him using the Instant Pot.  Mention diet food and he won’t even look at it, but I made this Chicken and Vegetable Soup and he didn’t complain. He wasn’t too happy about it not having any NOODLES~ but he found it very satisfying with the potatoes.  It took longer to prep the ingredients than it did to cook it in the Instant Pot.

Ingredients:

Serving Size: 4
12 oz. Chicken Breast cut into 2 in chunks
2 Cups Baby Potato, cut into 2-in chunks
2 Cups Onion, cut into 2-in chunks
2 Cups Carrots, sliced
1 Cup Mushrooms, chopped
1 Cup Celery, chopped
2 Cups Tomatoes, diced or you can use canned diced tomatoes
5 Cups Chicken Broth – I always use the Better Than Bouillon Chicken
½ tsp Garlic Powder
½ tsp Onion Powder
½ tsp Italian Seasoning
¼ tsp Sea Salt, to taste
¼ tsp Pepper, to taste
4 tsp Butter

Directions
1) Add the Potatoes, Onions, Carrots, Mushrooms, Celery, and Tomatoes.

2)Add the Chicken to the Instant Pot,  add Seasonings and Butter over the top.
and then add Chicken Broth.  The Chicken should be covered in liquid (if necessary, add water or broth until it is covered).

5) Cook on High Pressure for 5 minutes.

Do a Natural Pressure Release is when the steam releases on it’s own – (instructions below)

After the cooking cycle finished, wait until the Floating Valve (metal pin) completely drops before opening the lid.   Always turn the Venting Knob from Sealing Position to Venting Position to ensure all the pressure is released before opening the lid.

This pressure release method usually takes 10 – 25 minutes (depending on the amount of food in the pressure cooker).

6) Divide into 4 equal servings and enjoy!
