Happy Fall Y’All and Instant Pot

I can’t believe it’s September 22, 2017 already- First Day of Fall.  This past year has gone by so fast and it’s been 9 months since I last wrote a post. Holy Smokes!

A lot has happened, in April I was diagnosed with uterine cancer.  That meant having a complete hysterectomy, which was done laparoscopically and I came home the same day! Can you believe that!

I was fortunate and feel blessed that the cancer was contained and had not spread to lymph nodes or other organs. I healed rather quickly from the surgery and just had my 3 month post-op checkup a couple weeks ago and everything was fine.  So that’s kind of what’s been going in my life…but enough about me!

A few weeks ago I jumped on the Instant Pot band wagon and I have to say is WOW!  I love my Instant Pot- also known as the IP.  I bought the Instant Pot (that’s the name of it) in the 6 quart size because there is just my husband and me and I really didn’t like how big the 8 quart size was if it was sitting out on the counter. I like this model because it had the Manual button and all the recipes I found on Pinterest used that button.


I use it almost daily! Mac and Cheese in 8 minutes! I had my brother in law and his wife over for dinner and we had Swiss steak and potatoes and it was ready in 20 minutes!

I even made my own yogurt! I thought I just wanted to try it once, but it was the best tasting yogurt –better than the store bought in my opinion–I will probably just make my own from now on.

This is the ultimate test, if the spoon stand upright when it’s done!
Yogurt with Black Cherry Syrup  I had some baby food jars that I sterilized and used those to put the yogurt in,
so it was easy to grab one out of the fridge! What else have I made? Let me show you!

Leftover roast, beef broth, potatoes and pasta, this was dinner tonight, a total of 3 minutes in the IP.
This is my hubby’s favorite, IP Oreo Cheesecake topped with Dulche de Leche that I also made in the IP.
A total of 30 minutes for the cheesecake.
The Dulche De Leche was 30 minutes…this usually takes me 3 hours to make!
