Beanie Weenie Casserole

My hubby has been hungry for baked beans and hot dogs (weenies). Don’t ask me why, but I think he’s been watching too many westerns! lol Seriously, he said his mom used to make it a lot when he was a kid. I guess raising 6 boys you need to stretch your grocery budget somehow! Much like some of us are needing to do now with the cost of food! He also has been hungry for corn bread. I don’t ask questions, I just try to cook what I know he will eat!

So I happened upon this recipe for Beanie Weenie Casserole that uses baked beans, hot dogs and you guessed it corn muffin mix!!
BAM! All his favorite food in one dish!!

This is a very simple recipe, even your kiddos would enjoy helping you.
Take one package of your favorite hot dogs, cut into bite size pieces and placed into an
oven safe casserole dish.

Add a can of your favorite baked beans. I prefer Bush’s Country Style, they taste more like my own homemade beans, but you can use any baked bean you like!

Mix the beans and hot dogs together.

Take a box of Jiffy Corn Muffin mix and make it according to the directions on the box.

Pour the corn muffin mix on top of the beans and hot dogs and spread evenly.

Bake in a preheated 425 F degree oven for 25 minutes or until golden brown on the top.

I wasn’t sure if I was going to like this, but the sweetness from the cornbread really made it taste good.
I guess it would be like eating a corn dog!!
