Instant Pot Low Carb Cauliflower Cheese and Bacon Soup

It’s the Sunday after Thanksgiving and I just stepped on the scale!! Uh Oh!! Time to lose a few pounds! This happens every year from now to Christmas! It doesn’t matter that I decided on January 1, 2017 I was going to shed a few pounds.  So, today instead of big Sunday dinner, I made this low carb cheesy cauliflower soup. Mind you, it’s not “low calorie” but “low carb”.

First you will need the following ingredients:
1 head of cauliflower- cut in florets
1 small onion or half of a larger one- chopped
2 cans of chicken broth
8 slices of yellow American cheese
1 cup of mild cheddar cheese
1/2 cup of heavy cream
Bacon- 3 slices per person- cooked until crisp
salt and pepper to taste

Turn your Instant Pot on to Saute´ and add 2 T of oil, when the IP says HOT,
put in your onion and saute´ until softened.


Turn off the Saute´ feature and add the 2 cans of chicken broth (about 4 cups),

add the chopped cauliflower, salt & pepper.

Put the lid on the Instant Pot and make sure the valve is on Seal.
Using the Manual button, set time for 5 minutes. 

It will take about 5 minutes for your IP to come up to pressure because of all the liquid.
You could heat the chicken broth in the microwave to speed up this process.

Once the 5 minutes is up, do a Quick Release-QR (be careful, you might want to put a dish cloth over the valve to avoid splattering) or you can let it do a Natural Release for 10 minutes then finish releasing pressure with a QR


Take an immersion blender and blend the soup, I don’t do this very long as I like chunks of cauliflower, you can even forget this part if you don’t have an immersion blender.  Just use a potato masher to break up some of the bigger pieces.

Turn the Instant Pot back onto Saute´ and add the American cheese and stir until melted.

Then add the cheddar cheese and stir until all the cheese is melted.


Now, add the 1/2 cup of heavy cream.
Stir until blended and turn the Instant Pot OFF.


Serve it in a bowl topped with crumbled bacon.
My hubby isn’t a fan of cauliflower, but he loved the soup!
It warms the belly!
