Today was one of those rainy, dreary days and temperatures only went to the mid 60’s, even though it’s the second day of summer! I made some ham and beans in my Instant Pot today and when I make ham and beans, I always make homemade bread, but today decided to make these quick and easy skillet rolls. Now you don’t need to have a cast iron skillet to make these, but you do need a skillet or you could even use an 8″ X 8″ cake pan that will withstand 400 degree temperatures. I used my cast iron skillet and they turned out perfect.
You will need:

- 1 tablespoon rapid rise dry yeast

- 1 cup warm water

- ¼ cup white sugar

- ¼ cup melted salted butter

- 1 teaspoon salt

- 1 large egg
- 2½ to 3 cups all-purpose flour

- Preheat the oven to 400 degrees F.

- In a large mixing bowl, combine yeast, water, and sugar. Stir in melted butter, salt, and egg until combined.

- Slowly add in the flour, 1 cup at a time, until dough forms into a ball and easily pulls away from the sides of the mixing bowl.

- I recommend a 12″ skillet, but depending on the size of your skillet will determine how many rolls you need to make. I made 9 rolls, but you can divide them into 12 even pieces shaped into balls. Place into a cast iron skillet that you have lightly oiled. Cover and let rise 20 minutes, or until double in size.

- Bake in the preheated oven for 25 minutes.
Brush with another tablespoon of melted butter if desired.These rolls are so light and airy!! I bet you can’t eat just one!
I mentioned I made ham and beans in my Instant Pot. This is how I made them. The old “stove” method would have taken me about 2 hours with a constant eye on them to make sure the broth doesn’t boil away and they burn. In the Instant Pot, you just set the time and forget it!
Ingredients:
1 bag of dry navy beans, rinsed and soaked for about 1 hr in cold water, then drained
Add, I package of cubed ham
5 cups of water with 3-4 Tablespoons of Ham boullion – or ham broth if you have it.
3 stalks of celery, chopped
1 small onion, chopped.Put everything in the Instant Pot, set manual setting for 30 minutes or use the bean/chili setting.
Natural Release for 10 minutes, then Quick Release…be careful of any hot liquid, or you can just use a Natural Release until all the pressure is released.
Open the Instant Pot and give everything a good stir. I turned the saute feature on for about 5 minutes to let some of the broth cook down, but this part isn’t necessary, it’s just that we like our broth to be thicker.First, let’s talk about the Instant Pot.
